Sausage & Peppers Oh My!

On the Fourth of July, I was talking to my dad and he mentioned he was making Sausage & Peppers and Macaroni Salad for dinner. As soon as he said that, I started making a list of what I needed to buy at the store to copy him - he simply sounded too good!

The Sausage and Peppers are easy! I got three peppers (two green and one red) and two onions (yellow) - aren't they pretty?

I sauteed them together until they were softened with some olive oil and chopped garlic. I also sprinkled in some garlic salt to further enhance the flavor.

In a separate pan, I cooked the sausage. Once they were mostly cooked through, I split them in half and continued to cook then.

This method of cooking the sausages gives them a nice color and exposes the seasoning inside (like fennel seeds) - this enhances the flavors of the onions/peppers when it is all mixed up!

The macaroni salad is super easy! I boiled a pound of pasta (cavatappi) until al dente. I then ran it under cold water, drained it and put it in the fridge. It must be COLD before you mix it with the dressing. 

The dressing is very easy. Mix 1 1/2 cups of mayo (Hellamn's!), 1 tbsp red wine vinegar, 1 tsp white sugar and salt & pepper to taste. 

The veggies in the salad come from celery and carrots. I grated two carrots (about 1/2 cup) and cut about 5 stalks of celery into small pieces. You can add as much or as little as you want, depending on your preferences. Some people also add olives, pimento peppers or other items, but I like to keep it simple. 

One everything is prepared, just mix it up together - yum!

I placed some of the sausage & peppers on a sliced roll and served myself some macaroni salad.

The only thing that would make this meal better, is if I could have shared it with my family!
